Waka Waka Salad vs. Dara's Chinese Chicken Salad

Tracy and I wanted to make something easy this week so it was Waka Waka Salad..  In reading the ingredients it sounded a lot like my Chinese Chicken Salad. So we had to do it.  We had the Friday night fights on Sunday afternoon. We purchased all the ingredients and began chopping away.  Whose idea was this to chop so much darn cabbage, cilantro slice onions thin, shred carrots and fry wonton wrappers? It was mine according to Tracy.  I had a great time bossing Tracy around this time.  It was hysterical because every time she went to sit down or do something else I had another task I needed done. My husband welcomed Tracy to his world. LOL

You see it was also my bright idea to use up all the veggies I had lying around my house. I had gotten a little overzealous at the farmers market so along with the 2 salad’s we made ratatouille bake that we mixed with pasta, spaghetti sauce, zucchini, corn and pepper sauté.  We grilled up peaches for spinach salad with blue cheese, pecans and bacon, sautéed green beans in garlic, onion and tomatoes with corn bread croutons and oh yeah and we cut up melons. 

Ok enough of that it makes me tired again just thinking about it.  So anyways Guy your Waka Waka salad was a huge Waka Waka let down.  The salad its self was fine but the dressing was awful.  I mean bad bad bad. I was super bland and too much vinegar.  So Tracy and I tried to work our magic by adding and extra packet of the ramen noodle flavoring, sugar, mustard more garlic and ginger but nothing was helping this dressing.  Sorry anyone who makes the salad, do yourself a favor and buy marzetties Asian ginger dressing in the bottle. You won’t be disappointed.

Dara’s Chinese Chicken Salad

There are not measurements here folks you need to use what you love in the amounts you like, We love

Napa cabbage
Red cabbage
Green cabbage
Lettuce
Spinach
Green onions (I like a lot of these)
Cilantro
Carrots
Celery
Toasted almonds (I love a lot of these)
Rotisserie Chicken shredded

Slice everything thin toss together with the Asian Ginger dressing and enjoy!!

  1. That is a salad I could get into. It's sad about the dressing though. I'll have to see if we have the dressing you suggest. I've been itching to do a Chinese Chicken Salad...
